Simple Indian salad for snack

A simple salad with cucumber, tomato, onion and some chickpeas. I have used a 'Kirby' variety of cucumber as I found it lesser expensive and of smaller size than a 'seedless English cucumber'. Roma tomato are more suitable for salads, as they won't give out much moisture. I have used 'sweet mini peppers' instead of bellpepper, as I had that only at hand. Some people won't add bell pepper and instead there would be finely chopped green chili (for those spice lovers). Foods like this are more filling and easy to prepare. If you have the habit of buying cans of chickpeas, then this will get more easier.

In India salads like this are served as snacks during summer. Before salads got popular in Tamilnadu, we used to make a dish called kosambari (moong dal salad), then came the version of including slices of cucumber in that plantain leaf dinner for a special meal.   I think with the emerging 'mall culture'  (which is a good thing for everyone, as people who are from even the remotest village of Tamilnadu could get to taste the multicultural cuisines) salads got popular everywhere in Tamilnadu.




Ingredients:
Cucumber - 1
Tomato - 1
Red onion - 1/2
bell pepper - 1(small) or  sweet mini pepper - 2
lemon - 1/2
boiled Chickpeas - 1 cup
boiled sweet corn - 1 cup
Pink salt - to taste (1/2 tsp)
red chili powder - a pinch
cumin powder - 1/4 tsp
chopped cilantro - handful (to garnish)

Method:
Chop the cucumber, tomato, peppers, onion into small cubes. A vidalia chopper would make this job more easy. Put them all together in a mixing bowl, along with everything mentioned above.
Mix well and serve immediately or after cooling it in fridge for an hour. Garnish with chopped cilantro before serving.

Serving suggestion:
Serve as snack or along with any meal as salad.
Serves 4 people.

சாலட் என்பது மேற்கத்திய உணவு மட்டுமல்ல. நம் நாட்டிலும் கொசும்பரி என உண்ணப்படும் பச்சை காய்கறி கலவையே சாலட் எனப்படுகிறது.
சாலட்கள் என்பவை ஆரோக்கியமும் ,  குளிர்ச்சியும், தேவையான உப்பு சத்துக்களும் உடலுக்கு தரும் உணவாகும் .

தேவையான பொருட்கள் :
வெள்ளரி - 1, தக்காளி - 1, வெங்காயம் - 1 , குடைமிளகாய் - 1, வேக வைத்த கொண்டைக்கடலை - 1 கப், உதிர்த்த இனிப்பு கார்ன் - 1 கப், மல்லி தழை - சிறிது, எலுமிச்சை - 1/2 , இந்துப்பு (அல்லது வெள்ளை உப்பு) - 1/4 தேக்கரண்டி, சிவப்பு மிளகாய் தூள் - ஒரு சிட்டிகை, சிரக பொடி - 1 சிட்டிகை. 
செய்முறை:
வெள்ளரி, தக்காளி , வெங்காயம் , குடைமிளகாய் , இவற்றை பொடியாக வெட்டி , ஒரு அகலமான பாத்திரத்தில் போடவும். கொண்டைக்கடலை , சோளம், எலுமிச்சை சாறு  மற்றும் எல்லா பொடியும் சேர்த்து உப்பு போட்டு குலுக்கவும். உடனே பரிமாறலாம். பிரிட்ஜ் இல் 1 மணி நேரம் வைத்து குளிச்சியான சாலட் ஆக பரிமாறலாம்.

Aloo channa chaat

Aloo - potato ; channa - chickpeas / garbanzo beans; Chat / chaat - Indian salad.

This is one guiltless food for those weight watchers. Chaat food items are much appreciated as evening snack or starter foods in India. Aloo channa chat is more popular among Pakistanis. The recipe is so simple ....just mix the main ingredients with the seasoning and serve with freshly chopped vegetables....enjoy!

Aloo channa chaat.

Ingredients: (for 8 servings)
Potato - 2 (big)
dry chickpeas - 1 cup

Seasoning:
red chilly powder - 1 tbsp
cumin powder - 1 tsp
coriander powder - 1 tbsp
curry masala powder - 1 tsp
sugar - 1 tsp
salt - 1 tbsp (to taste)

Fresh ingredients:
Lime - 1/2
Onion - 2
carrot - 2
cilantro , mint leaf - few stalks
cucumber - 1

Method:
Soak the white channa (chick peas) overnight and cook it to tender (pressure cook or cook in stove top for 2 hours).
(Or) Buy a can of cooked chickpeas, drain water, wash to remove the salt. Keep aside.
Boil the potato and peel.
Potato and channa can be cooked and kept in freezer till we need to make the salad.

Mix the ingredients given for seasoning or just use store bought chaat masala.

Shred the carrot, chop the onion, cucumber and cilantro finely.

Chop the potato. Reheat the potato and chickpeas together together (in microwave or in a wok) before serving. Mix the required seasoning powder to taste.

Aloo channa chat is ready!

Serving suggestions:
Serve hot topped with the fresh vegetables and squeeze lime over it.
Makes a healthy snack.

Note:
I suggest cooking the chick peas from scratch if time permits. They can be kept frozen in batches.

White pumpkin raitha

Raitha - Indian salad with yogurt as base.

I like white pumpkin (ash gourd) very much. Basically it has no significant taste and resembles a cucumber or bottle gourd. But will definitely enhance the taste of sambar or mor kulambu. Thadiyangai (Tamil) is the other name of white pumpkin. Nowadays we both are more towards vegetarian foods (lent days, as well as my personal wish. But I will continue preparing NV for my friends and family...) and I enjoy playing with different vegetables:)  I love to make different raithas along with sambar, rice and other side dishes during weekends and here is a raitha recipe using this white pumpkin.

A large slice of winter melon / white pumpkin (kalyana poosanikai).

Ingredients:
White pumpkin - 1 small slice (150 gm)
Indian dahi /plain yogurt /curd (thick) - 1 cup
white / red onion - 1 (small)
oil - 1 tsp
mustard seeds - 1/2 tsp
urad dhal - 1/2 tsp
curry leaves - 1 sprig
salt - to taste.
cilantro - few leaves.

To grind:
green chilli - 2
shredded coconut - 2 tbsp
cumin seeds - 1/4 tsp

Method:
Wash the ash gourd and remove the skin , seeds.
Cut it into small cubes (1/2 inch).
Heat oil in a wok and add urad dal,mustard splutter. As soon as the mustard seeds stop crackling, add the curry leaves and fry for a second. Immediately add the chopped white pumpkin. Stir well and cook covered (just add salt and cook without water - 3 minutes only). Let it cool completely.
Coarsely grind the items given to grind without water.
Add the ground paste, yogurt, freshly chopped onion and mix well.
Garnish with finely chopped cilantro leaves.
White pumpkin raitha is ready!

Note:
1.We can cook the white pumpkin separately in water, drain excess water and then temper it. But that will lead to loss of important minerals and vitamins. So I follow the above method, which is not common.
2.Use whole milk curd for this recipe to get a delicious raitha.
3.we can make this raitha without adding the ground masala also, but add finely chopped green chillies. (see picture below)

Serving suggestions:
Serve as side dish with any rice or with chapathi.
